Smoked Pork Sirloin in Mushroom Sauce
A Wood Pellet Grill Recipe

Prep Time: 15 minutes
Cook Time: 35 minutes at 375* (190c), 3 hours at 250* (121c)
Grill: Pellet Pro Wood Pellet Grill
Pellets: BBQ Pellets  

Ingredients: Smoked Pork Sirloin in Mushroom Sauce

  • 3 small pork sirloin roasts, about 4lbs. total
  • Date Night Doins Butt Rub, to taste (Ours)
  • 1 lb. baby Bella mushrooms, sliced
  • ¼ cup smoked, minced garlic
  • 2 teaspoons Date Night Doins Heat (Ours)
  • 3 cups heavy cream
  • 1 cup chicken stock
  • 1 cup shallots or green onions, sliced
  • 1 teaspoon onion powder
  • 2 teaspoons garlic powder
  • 1 Tablespoon butter, melted
  • 1 Tablespoon olive oil
  • Cooking Directions: Smoked Pork Sirloin in Mushroom Sauce

    Preheat your Pellet Pro Grill to 375* (190c).

    Season pork on all sides with Date Night Butt Rub. (Ours)

    In a large, deep skillet brown pork in butter & olive oil. You can do this on the stove top or on the Pellet Pro Grill.

    Remove pork to platter.

    Sauté mushrooms in skillet until browned. Blend in remaining ingredients.

    Simmer for 5 minutes.

    Return pork to skillet cover skillet and then onto the grill for 30 minutes @ 375* (190c).

    After 30 minutes uncover your skillet and reduce the temperature down to 250* (121c).

    Let it sit in the smoke for 3 hours or until pork fork is tender.

    You are looking for an internal temperature around 190* (90c) pull it off, cover it and let it rest for 5 to 10 minutes before serving. U.S.D.A. safe is for pork is 140* (60c) but your pork will be tough here.

    Note: I get a lot of questions about the kind of pellets you can use with a recipe. Keep in mind that a recipe is just an outline. Some you need to follow closely like when you are making bread, but most you can do anything you can dream, our favorite way to cook. Feel free to mix and match the pellets until you find a combination you really like. Also, you are only smoking at temps less than 250 degrees (122c), anything higher is cooking and there will not be much if any smoke, so it does not matter what kind of pellet you are using.
