The combination of the circulation fan, sportsman controller low temps and massive cook chamber size allowed me to make some of the best jerky I have made to date. I made about 18 lbs. of pork and turkey jerky. There was plenty of smoke and space! Temps were even side to side and top to bottom. It is worth upgrading the heating probe, so we would definitely recommend it. You will see in the photos that we also added the Big Kahuna Cold Smoke Generator for the flexibility of adding smoke for that amazing smoke ring, or to cold smoke some cheese, eggs, bacon, you name it! I LOVE being able to have wood stick smoke in the first 2 hours of crucial smoking time. It works so well. My last brisket had seriously excellent flavor.
