Purchased an pellet pro assembly to use in a custom hybrid offset smoker. It attached well onto an old country brazos and able to maintain temperature using both wood splits... read more and pellet. The combination of the circulation fan, sportsman controller low temps and massive cook chamber size allowed me to make some of the best jerky I have made to date. I made about 18 lbs. of pork and turkey jerky. There was plenty of smoke and space! Temps were even side to side and top to bottom. It is worth upgrading the heating probe, so we would definitely recommend it. You will see in the photos that we also added the Big Kahuna Cold Smoke Generator for the flexibility of adding smoke for that amazing smoke ring, or to cold smoke some cheese, eggs, bacon, you name it! Things break, things don't work out as planned in life but it's how we deal with these challenging times that defines our character. That might seem a bit over board... read more as we are just talking about a smoker but Dennis and the family/team there at Smoke Daddy always rise to the occasion. I've had my vertical for nearly 3 years (30-40+ hours a week is common). I've had to call them twice over that time and every time I screwed something up they where there at the other end of the phone walking me through it. Yes, even 3 years later when the unit is out of warranty and well worn. This commitment to excellence is hard to find but when you do you hold on to it. Buy with confidence and know that you have an ally when you do.

I’ve also attached the Smoke Daddy Big Kahuna cold smoke generator to it for cold smoking cheese and fish. Both products have worked well for me so far.
